This is not a wine to be drunk at the beginning of a meal;
it requires patience and preparation, even a little tension,
in anticipation of the first sip.
TIP
To keep the wine’s spontaneity, decant and air
if to be enjoy soon after opening.
To appreciate the wine from every angle, around 16°
is the ideal temperature; chill a little if needed.

ATMOSPHERE
Our first plots of white grapes on these terroirs have now reached harvest age,
and we can finally begin to produce the white Minervois we have dreamed of so much.
PAIRING
“Sur la pointe des pieds” literally means “on tiptoe”,
or here, moving forwards very delicately.
It describes how we have approached adding this string to our bow,
with an initially restricted volume that we hope to develop over the coming years.
TIP
We are totally convinced of the potential of our sandstone soils and we invite you to share the fruit of our dreams!
Serve lightly chilled, at around 11°C.

I go down to my basement and think about the guest who'll
be here in an hour.He likes red meat.
I prepared a special piece for him from Gilles the butcher.
I grasp the neck of a bottle without a second thought.
Pairing
A strip of beef seared on the plancha with a tiny drizzle
of olive oil, freshly ground pepper and coarse Gruissan salt,
a few sliced courgettes around it, and in five minutes it is ready.
Life is simple sometimes.
TIP
Choose a mature vintage for dishes with sauce and a younger
one for grilled dishes.
The last vintage can do both.
Serve at 16°C in summer, 18°C in winter.
